Spicy Tunisian Eggs in Harissa Tomato Sauce (Ojja)

✎
HOW TO MAKE IT

Let's cook.

01

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chopped onion and cook for 5-7 minutes, or until softened and translucent.

02

Add the minced garlic and 1 tablespoon of harissa paste to the skillet. Cook for 1 minute, stirring constantly, until fragrant.

03

Stir in the 14.5-ounce can of diced tomatoes (undrained), 1/2 teaspoon of ground cumin, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper. Bring the mixture to a simmer.

04

Reduce the heat to low, cover the skillet, and let it simmer for 10 minutes, allowing the flavors to meld and the sauce to thicken slightly.

05

Create four small wells in the tomato sauce using the back of a spoon. Carefully crack one egg into each well.

06

Cover the skillet again and cook for 5-8 minutes, or until the egg whites are set and the yolks are cooked to your desired consistency.

07

Garnish with 2 tablespoons of fresh chopped parsley and serve immediately, preferably with crusty bread for dipping.

Chef's Tips

For an extra layer of flavor, you can add a pinch of caraway seeds along with the cumin. Ensure your skillet has a tight-fitting lid to help the eggs cook evenly.

Easy Substitutions

If you prefer a milder dish, reduce the amount of harissa paste or use a mild variety. Bell peppers (red or green) can be added with the onions for more vegetables. Feta cheese crumbled over the top before serving also makes a delicious addition.

Storage & Reheating

Ojja is best enjoyed fresh. Leftovers can be stored in an airtight container in the refrigerator for up to 1 day, but the eggs may become overcooked when reheated. Reheat gently on the stovetop over low heat.
