Tunisian Fricassé Sandwich

In a large bowl, combine flour, yeast, salt, and sugar. Gradually add warm water, mixing until a soft dough forms. Knead on a lightly floured surface for 5-7 minutes until smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a clean cloth, and let it rise in a warm place for 30 minutes, or until doubled in size.
Divide the risen dough into 4 equal pieces. Roll each piece into an oval shape, about 1/4 inch thick.
Heat vegetable oil in a deep pot or Dutch oven over medium-high heat to 350°F (175°C). Carefully fry each dough oval for 2-3 minutes per side, until golden brown and puffed. Remove with a slotted spoon and drain on paper towels.
Once cooled slightly, carefully slice each fried dough pocket open along one side, creating a pocket. Be careful not to cut all the way through.
Spread 1/2 tablespoon of harissa inside each pocket. Fill with drained tuna, diced potatoes, sliced hard-boiled eggs, and black olives. Serve immediately.
