Tunisian Date and Semolina Pancakes (Baghrir)

These light and airy Tunisian pancakes, known as Baghrir, are made with fine semolina and studded with sweet dates. They are perfect for a unique and satisfying breakfast, offering a delightful texture and natural sweetness.

✎
HOW TO MAKE IT

Let's cook.

01

In a large bowl, whisk together the fine semolina, all-purpose flour, active dry yeast, and salt.

02

Gradually add the warm water to the dry ingredients, whisking continuously until a smooth batter forms. Ensure there are no lumps.

03

Stir in the finely chopped pitted dates. Cover the bowl with a clean kitchen towel and let the batter rest in a warm place for 20 minutes, allowing the yeast to activate and the batter to slightly thicken.

04

Heat a non-stick pan or griddle over medium heat. Once hot, pour about 1/4 cup of batter onto the pan for each pancake. Do not spread the batter; it should naturally form a round shape.

05

Cook each pancake for 2-3 minutes, or until small bubbles appear on the surface and pop, creating a characteristic 'holey' texture, and the edges are set. Do not flip the pancakes; they are cooked only on one side.

06

Remove the cooked pancake from the pan and place it on a clean kitchen towel to cool slightly. Repeat with the remaining batter, stacking the cooked pancakes on the towel to keep them soft.

07

Serve the Tunisian Date and Semolina Pancakes warm, drizzled with melted butter and honey.

Chef's Tips

For the best 'holey' texture, ensure your pan is at the right temperature: not too hot, which will cook the outside too quickly, and not too cool, which won't allow the bubbles to form. A quick test with a small amount of batter can help you adjust the heat.

Easy Substitutions

If fine semolina is unavailable, you can use regular semolina, but the texture will be slightly coarser. For a different sweetener, maple syrup or date syrup can be used instead of honey. You can also add a pinch of orange blossom water to the batter for an authentic Tunisian flavor.

Storage & Reheating

Store leftover pancakes in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 4 days. Reheat gently in a microwave or a lightly oiled pan over low heat.
