Sweet Sticky Rice with Fresh Mango (Khao Niao Mamuang)

Indulge in a beloved Thai classic: tender, sweet sticky rice bathed in rich coconut milk, perfectly complemented by slices of ripe, juicy mango. This tropical delight is a fantastic way to start your day or conclude a meal.

✎
HOW TO MAKE IT

Let's cook.

01

Rinse the glutinous rice thoroughly under cold water until the water runs clear. Soak the rice in cold water for at least 30 minutes, or up to 4 hours.

02

Drain the soaked rice well. Steam the rice in a steamer basket lined with cheesecloth over boiling water for 20-25 minutes, or until the rice is tender and translucent.

03

While the rice is steaming, prepare the coconut sauce. In a small saucepan, combine 1 cup of coconut milk, granulated sugar, and salt. Heat over medium-low heat, stirring constantly, until the sugar is fully dissolved. Do not boil.

04

Once the rice is cooked, transfer it to a medium bowl. Pour about 3/4 cup of the warm coconut sauce over the hot rice. Stir gently to combine, then cover the bowl and let it sit for 15 minutes to allow the rice to absorb the sauce.

05

Peel and slice the ripe mangoes. Discard the pit.

06

To serve, scoop a portion of the sweet sticky rice onto a plate. Arrange mango slices alongside the rice. Drizzle with a little of the remaining coconut sauce and sprinkle with toasted sesame seeds.

07

Serve warm or at room temperature.

Chef's Tips

For extra richness, you can lightly toast the sesame seeds in a dry pan over medium heat for 2-3 minutes until fragrant. Ensure your mangoes are perfectly ripe for the best flavor and texture.

Easy Substitutions

If glutinous rice is unavailable, you can use sushi rice, though the texture will be slightly different. For a less sweet version, reduce the sugar to 1/4 cup. You can also use a pinch of pandan extract in the coconut sauce for a subtle floral aroma.
▱

Storage & Reheating

Store leftover sticky rice and mango separately in airtight containers in the refrigerator for up to 2 days. The rice will firm up when chilled; gently reheat it in the microwave with a splash of coconut milk to soften.
