Spanish Potato and Chorizo Hash

This hearty Spanish-inspired hash combines crispy potatoes with savory chorizo and sweet bell peppers, all topped with a perfectly fried egg. It's a flavorful and satisfying breakfast or brunch that comes together quickly.

✎
HOW TO MAKE IT

Let's cook.

01

Heat 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat. Add the diced potatoes and cook for 10-12 minutes, stirring occasionally, until golden brown and tender.

02

Push the potatoes to one side of the skillet. Add the diced chorizo to the other side and cook for 3-4 minutes, breaking it up with a spoon, until it starts to crisp and release its oils.

03

Add the diced red bell pepper and yellow onion to the skillet with the chorizo and cook for 3-4 minutes, until softened.

04

Stir in the minced garlic and smoked paprika. Cook for 1 minute more until fragrant, then mix all ingredients together in the skillet. Season with salt and black pepper.

05

In a separate small non-stick skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Crack the eggs into the skillet and fry for 2-3 minutes, until the whites are set and the yolks are still runny (or to your preference).

06

Divide the potato and chorizo hash between two plates. Top each serving with a fried egg.

07

Garnish with fresh chopped parsley and serve immediately.

Chef's Tips

For extra crispiness, avoid overcrowding the skillet when cooking the potatoes. Cook them in a single layer if possible, or in two batches if your skillet is smaller.

Easy Substitutions

Sweet potatoes can be used instead of Yukon Golds for a slightly sweeter flavor. If you don't have Spanish chorizo, any spicy sausage can be substituted, though the flavor profile will change. Feel free to add a pinch of cayenne pepper for more heat.

Storage & Reheating

Leftover hash can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over medium heat until warmed through. Fried eggs are best enjoyed fresh.
