Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced chorizo and cook for 5-7 minutes, stirring occasionally, until browned and crispy. Remove the chorizo with a slotted spoon and set aside, leaving the rendered fat in the skillet.
Add the diced potatoes to the skillet and cook for 10-12 minutes, stirring occasionally, until tender and lightly browned. If the skillet seems dry, add a tiny splash more olive oil.
Stir in the diced onion and red bell pepper. Cook for another 5-7 minutes, until the vegetables are softened.
Return the cooked chorizo to the skillet. Stir in the smoked paprika, salt, and black pepper. Mix well to combine all ingredients.
Make four small wells in the hash mixture. Crack one egg into each well. Cover the skillet and cook for 3-5 minutes, or until the egg whites are set and the yolks are cooked to your desired doneness.
Serve immediately, optionally garnished with fresh parsley.
