Sholeh Zard: Classic Persian Saffron & Rosewater Pudding

Rinse the basmati rice thoroughly under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and 4 cups of water. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 20 minutes, or until the rice is very tender and has absorbed most of the water.

While the rice is cooking, gently crush the saffron threads and steep them in 2 tablespoons of hot water for at least 10 minutes to bloom and release their color and aroma.

Once the rice is tender, stir in the granulated sugar, bloomed saffron with its liquid, rosewater, ground cardamom, slivered almonds, and butter. Mix well to combine.

Continue to cook on low heat, stirring frequently, for another 15-20 minutes, or until the pudding thickens to your desired consistency. It should be creamy but still pourable.

Remove the saucepan from the heat. Ladle the warm pudding into individual serving bowls or a large serving dish.

Garnish generously with additional slivered almonds and chopped pistachios. You can also sprinkle a pinch of ground cinnamon for extra flavor and visual appeal.
