North African Honey-Nut Fillo Rolls
These delightful North African Honey-Nut Fillo Rolls are a perfect dessert, featuring crispy fillo pastry wrapped around a sweet, spiced nut filling and drizzled with fragrant honey syrup. They are surprisingly easy to make and offer a wonderful blend of textures and flavors.

Preheat your oven to 350°F/175°C. In a medium bowl, combine the chopped walnuts, chopped almonds, granulated sugar, and ground cinnamon. Mix well to ensure the spices are evenly distributed.
Lay one sheet of fillo dough on a clean, dry surface. Brush it lightly with melted butter. Place another sheet of fillo dough directly on top and brush it with butter as well. Repeat this process for a total of three layers of fillo dough.
Spoon about 2 tablespoons of the nut mixture in a line along one long edge of the layered fillo dough, leaving about a 1-inch border from the edge. Fold the short sides of the fillo dough inward over the nut mixture, then carefully roll the dough tightly from the long edge to form a log.
Place the rolled fillo log seam-side down on a baking sheet. Repeat the process with the remaining fillo dough and nut mixture until all ingredients are used. You should have approximately 8-10 rolls.
Brush the tops of the fillo rolls with any remaining melted butter. Bake for 20-25 minutes, or until the rolls are golden brown and crispy.
While the rolls are baking, prepare the syrup. In a small saucepan, combine the honey and orange blossom water. Heat over low heat for 2-3 minutes, stirring until the honey is slightly thinned and warm.
Once the fillo rolls are out of the oven, immediately drizzle the warm honey syrup generously over them. Let the rolls cool completely on the baking sheet before serving, allowing the syrup to soak in.
