Malaysian Sago Gula Melaka Pudding: A Tropical Delight
Indulge in the authentic flavors of Malaysia with this Sago Gula Melaka Pudding. This beloved dessert combines tender sago pearls with creamy coconut milk and the distinctive sweetness of gula melaka (palm sugar) syrup, creating a truly refreshing and satisfying treat.

Rinse 1 cup of small sago pearls under cold water until the water runs clear. This removes excess starch and prevents stickiness.
Bring 4 cups of water to a rolling boil in a medium saucepan over high heat. Add the rinsed sago pearls and stir immediately to prevent clumping. Reduce heat to medium-low and simmer for 15-20 minutes, stirring occasionally, until the sago pearls are mostly translucent with only a tiny white dot in the center.
While the sago cooks, prepare the gula melaka syrup. In a small saucepan, combine 1 cup of chopped gula melaka and 1/2 cup of water. Cook over medium heat, stirring until the gula melaka is fully dissolved and the syrup thickens slightly, about 5-7 minutes. Remove from heat and set aside.
Once the sago pearls are cooked, drain them through a fine-mesh sieve and rinse thoroughly under cold running water to remove any remaining starch and stop the cooking process. This also ensures the pearls remain separate and chewy. Transfer the sago to individual serving bowls or a large communal bowl.
In a separate small saucepan, gently heat 1 can of full-fat coconut milk with 1/4 teaspoon of salt over low heat for 2-3 minutes, stirring constantly, until just warmed through. Do not boil the coconut milk.
Pour the warmed coconut milk over the sago pearls. Drizzle generously with the prepared gula melaka syrup just before serving. Serve immediately or chill for a refreshing cold dessert.
