Kenyan Sukuma Wiki and Ugali with Kuku Choma

Prepare the Kuku Choma: In a bowl, combine chicken thighs with lemon juice, garlic powder, ginger powder, paprika, 1/2 teaspoon salt, and black pepper. Rub the spices into the chicken and let it marinate for at least 15 minutes.
Grill the Kuku Choma: Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Sear the chicken thighs skin-side down for 5-7 minutes until golden brown. Flip and cook for another 5 minutes. Transfer the skillet to an oven preheated to 375°F/190°C and roast for 20-25 minutes, or until the internal temperature reaches 165°F/74°C.
Start the Sukuma Wiki: While the chicken roasts, heat 2 tablespoons vegetable oil in a large pot or Dutch oven over medium heat. Add chopped red onion and sauté for 3-4 minutes until softened. Add minced garlic and diced tomato, cooking for another 3-5 minutes until the tomato breaks down.
Cook the Sukuma Wiki: Add the chopped collard greens to the pot. Stir well, cover, and cook for 10-15 minutes, stirring occasionally, until the greens are tender. Season with 1/2 teaspoon salt.
Prepare the Ugali: Bring 2 cups of water to a boil in a separate medium saucepan. Gradually add the white cornmeal, stirring continuously with a wooden spoon to prevent lumps. Reduce heat to low and continue stirring vigorously for 5-7 minutes, pressing the mixture against the sides of the pot, until a thick, firm dough forms and pulls away from the sides.
Serve: Once the chicken is cooked, remove it from the oven. Form the ugali into a smooth mound or individual portions. Serve the Kuku Choma, Sukuma Wiki, and Ugali immediately.
