Hungarian Scrambled Eggs with Sausage and Peppers (Lecsós Tojás)
Lecsós Tojás is a hearty Hungarian breakfast featuring scrambled eggs cooked with a flavorful base of sautéed sausage, bell peppers, and tomatoes. It's a comforting and satisfying dish perfect for starting your day.
Let's cook.
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced Hungarian sausage and cook for 5-7 minutes, stirring occasionally, until browned and slightly crispy. Remove the sausage from the skillet and set aside, leaving the rendered fat in the pan.
Add the sliced bell pepper and onion to the skillet. Sauté for 8-10 minutes over medium heat, stirring occasionally, until softened and lightly caramelized.
Stir in the diced tomato and 1/2 teaspoon of sweet paprika. Cook for 3-5 minutes, until the tomatoes begin to break down and the paprika is fragrant.
Return the cooked sausage to the skillet with the vegetables. Stir to combine.
In a small bowl, whisk together the 4 large eggs, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper.
Pour the whisked eggs over the sausage and vegetable mixture in the skillet. Cook for 2-4 minutes, gently stirring and scrambling the eggs until they are set but still moist.
Serve immediately.
