In a small saucepan, combine the peanut butter, brown sugar, remaining 2 tablespoons of soy sauce, and 1/2 cup of water. Cook over low heat, stirring constantly, for 3-5 minutes until the sauce thickens slightly.

Lay a fresh lumpia wrapper flat. Place a portion of the sautéed vegetable and shrimp mixture in the center. Fold in the sides, then roll tightly from the bottom up to form a spring roll.

Repeat with the remaining wrappers and filling. Serve the Lumpiang Sariwa immediately with the warm peanut sauce, garnished with crushed peanuts.
