Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, combine the ground beef, finely chopped onion, chopped fresh parsley, cumin, coriander, cayenne pepper (if using), salt, and black pepper. Mix thoroughly with your hands until all ingredients are well incorporated.
Carefully open each pita bread to create a pocket. Divide the meat mixture into four equal portions.
Stuff one portion of the meat mixture evenly into each pita pocket, spreading it out to the edges.
Brush both sides of each stuffed pita with olive oil.
Place the stuffed pitas on the prepared baking sheet. Bake for 20-25 minutes, or until the pita is golden brown and crispy, and the meat is cooked through. Flip halfway through cooking for even browning.
Remove from the oven, let cool for a few minutes, then slice each hawawshi into wedges and serve hot.
