Cook the bacon: Place 4 slices of bacon in a large skillet over medium heat. Cook until crispy, about 5-7 minutes, flipping occasionally. Remove bacon from the skillet, drain on a paper towel-lined plate, and crumble once cooled. Reserve 1 teaspoon of bacon fat in the skillet, discarding the rest.
Prepare the eggs: In a medium bowl, whisk together 4 large eggs, 2 tablespoons of milk, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper until well combined and slightly frothy.
Melt butter: Add 1 teaspoon of butter to the skillet with the reserved bacon fat over medium-low heat. Once melted, pour in the egg mixture.
Scramble the eggs: Let the eggs set for about 30 seconds without stirring. Then, gently push the cooked portions from the edges towards the center with a spatula, allowing the uncooked egg to flow underneath. Continue this process for 2-3 minutes until the eggs are mostly set but still slightly moist.
Add cheese and chives: Sprinkle 1/2 cup of shredded cheddar cheese and 1 tablespoon of fresh chives over the eggs. Gently fold them into the scramble until the cheese is melted, about 30 seconds.
Serve: Divide the cheesy bacon and chive scramble between two plates. Garnish with the crumbled bacon and the remaining 1 tablespoon of fresh chives.
