Cardamom Rose Shrikhand
This creamy Indian dessert is made from strained yogurt, infused with aromatic cardamom and delicate rose water. It's a refreshing and elegant treat, perfect for any occasion.

Line a fine-mesh sieve with two layers of cheesecloth and place it over a bowl. Pour the yogurt into the cheesecloth.
Gather the edges of the cheesecloth and tie them securely, forming a pouch. Place a heavy object on top of the yogurt pouch to help press out the whey.
Refrigerate for at least 4 hours, or preferably overnight, until about 1 cup of thick, strained yogurt (chakka) remains.
Transfer the strained yogurt to a mixing bowl. Add the powdered sugar, ground cardamom, and rose water.
Whisk vigorously with a spoon or whisk until the mixture is smooth, creamy, and well combined, about 2-3 minutes.
Spoon the shrikhand into individual serving bowls. Cover and chill for at least 30 minutes before serving.
Garnish with slivered almonds, chopped pistachios, and a few saffron strands, if using, just before serving.
