Decadent Tim Tam Cheesecake with Rich Chocolate Ganache

Press the biscuit mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes at 325°F (160°C), then remove from oven and let cool slightly.
In a large bowl, beat the softened cream cheese and 1/2 cup granulated sugar with an electric mixer until smooth and creamy. Beat in the 2 large eggs one at a time, mixing until just combined after each addition. Stir in 1 teaspoon vanilla extract and 1/2 cup heavy cream.
Pour the cheesecake filling over the cooled Tim Tam crust. Bake for 50-60 minutes at 325°F (160°C), or until the edges are set and the center jiggles slightly when gently shaken. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.
Remove the cheesecake from the oven and let it cool completely on a wire rack. Once cool, refrigerate for at least 4 hours, or preferably overnight, to allow it to set fully.
To make the chocolate ganache, place 100 grams chopped dark chocolate in a heatproof bowl. Heat 1/4 cup heavy cream in a small saucepan over medium heat until it just begins to simmer. Pour the hot cream over the chopped chocolate and let it sit for 5 minutes.
Whisk the chocolate and cream together until smooth and glossy. Let the ganache cool for about 10-15 minutes, stirring occasionally, until it thickens slightly.
Pour the cooled ganache over the chilled cheesecake, spreading it evenly to the edges. Refrigerate for another 30 minutes to allow the ganache to set.
Carefully remove the cheesecake from the springform pan, slice, and serve.
