Cook the Nyama Choma: Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the marinated beef and cook for 15-20 minutes, turning occasionally, until browned and cooked through. Remove from skillet and set aside.
Prepare the Sukuma Wiki: In the same skillet, add the chopped onion and cook over medium heat for 5 minutes until softened. Add the minced garlic and cook for 1 minute more until fragrant.
Sauté the Sukuma Wiki: Add the chopped collard greens and 1/4 cup of water to the skillet. Season with the remaining 1/2 teaspoon of salt. Cover and cook for 10-12 minutes, stirring occasionally, until the greens are tender.
Make the Ugali: Bring 4 cups of water to a rolling boil in a large pot over high heat. Reduce heat to medium-low. Gradually add the cornmeal, about 1/4 cup at a time, stirring continuously with a wooden spoon to prevent lumps. Continue stirring vigorously for 10-15 minutes until the mixture thickens into a firm, smooth dough-like consistency.
Serve: Scoop the ugali onto a serving platter or individual plates. Serve immediately with the sukuma wiki and nyama choma alongside.
