Heat the olive oil in a large skillet or cazuela over medium-low heat.
Add the sliced garlic to the oil and cook gently for 3-4 minutes, until fragrant and lightly golden. Be careful not to burn the garlic.
Stir in the smoked paprika and red pepper flakes (if using). Cook for 30 seconds, stirring constantly, until fragrant.
Increase the heat to medium-high. Add the seasoned shrimp to the skillet in a single layer. Cook for 1-2 minutes per side, until the shrimp turn pink and opaque.
Remove the skillet from the heat. Stir in the remaining 1/4 teaspoon of salt and the fresh parsley.
Serve immediately with crusty bread for dipping in the flavorful oil.
