Authentic Slovak Medovník: Honey Cake with Walnut Cream

Combine 1/2 cup granulated sugar, 1/2 cup honey, 1/4 cup softened unsalted butter, and 2 large eggs in a heatproof bowl set over a saucepan of simmering water (bain-marie). Whisk constantly for 10 minutes, until the mixture is warm and slightly thickened.
Remove the bowl from heat and stir in 1 teaspoon baking soda, 1 teaspoon cinnamon, 1/2 teaspoon ground cloves, and 1/4 teaspoon nutmeg. Gradually add 3 cups all-purpose flour, mixing until a soft dough forms. Divide the dough into 6 equal portions.
On a lightly floured surface, roll each dough portion into a thin 8-inch circle. Bake each circle individually on a parchment-lined baking sheet at 350°F/175°C for 5-7 minutes, or until golden brown and firm. Trim the edges to create perfect circles while still warm. Let the cake layers cool completely.
For the walnut cream, whip 2 cups cold heavy cream with 1 cup powdered sugar until stiff peaks form. Gently fold in 1 cup finely ground walnuts.
Assemble the cake by spreading an even layer of walnut cream between each cooled cake layer. Stack the layers, finishing with a layer of cream on top and sides. Use some of the trimmed cake scraps, finely crushed, to decorate the sides and top of the cake.
Refrigerate the Medovník for at least 8 hours, or preferably overnight, to allow the layers to soften and the flavors to meld.
