Creamy Rosewater Pistachio Mahalabia

Indulge in the delicate flavors of this traditional Egyptian Mahalabia. This luscious milk pudding, scented with fragrant rosewater and adorned with a generous sprinkle of crunchy pistachios, offers a simple yet sophisticated conclusion to any meal.

✎
HOW TO MAKE IT

Let's cook.

01

In a medium saucepan, whisk together 3 cups of whole milk and the granulated sugar over medium heat until the sugar dissolves and the milk is warm, but not boiling.

02

In a small bowl, whisk the remaining 1 cup of cold milk with the cornstarch until completely smooth and no lumps remain. This is your cornstarch slurry.

03

Gradually pour the cornstarch slurry into the warm milk mixture in the saucepan, whisking continuously to prevent lumps.

04

Continue to cook over medium heat, stirring constantly with a whisk or wooden spoon, until the mixture thickens to a pudding-like consistency, about 8-10 minutes. It should coat the back of a spoon.

05

Remove the saucepan from the heat and stir in the rosewater.

06

Pour the Mahalabia into individual serving bowls or ramekins.

07

Allow the puddings to cool at room temperature for about 15 minutes, then cover them with plastic wrap and refrigerate for at least 2 hours, or until thoroughly chilled and set.

08

Before serving, sprinkle the chopped pistachios generously over each Mahalabia.

Chef's Tips

For an extra creamy texture, you can add 1/4 cup of heavy cream to the milk mixture in step 1. Adjust the amount of sugar to your preference; some prefer a sweeter pudding. Ensure the cornstarch is fully dissolved in cold milk before adding it to the warm milk to avoid lumps.

Easy Substitutions

Orange blossom water can be used instead of rosewater for a different floral note. Almonds or walnuts can replace pistachios for the topping. For a dairy-free version, use a plant-based milk like almond or oat milk, though the texture may vary slightly.

Storage & Reheating
