Creamy Sun-Dried Tomato and Spinach Chicken
This one-pan Italian-inspired dish features tender chicken breasts simmered in a rich, creamy sauce with sun-dried tomatoes and fresh spinach. It's a quick and satisfying meal perfect for a weeknight dinner.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Season the chicken pieces with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Add the chicken to the hot skillet and cook for 5-7 minutes, or until browned on all sides and cooked through. Remove the chicken from the skillet and set aside.
Add the minced garlic and chopped sun-dried tomatoes to the same skillet. Sauté for 1 minute until fragrant.
Pour in 1 cup of chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan. Cook for 2-3 minutes, allowing the liquid to reduce slightly.
Stir in 1/2 cup of heavy cream and bring the sauce to a gentle simmer. Cook for 3-5 minutes, or until the sauce thickens slightly.
Return the cooked chicken to the skillet. Add 4 ounces of fresh spinach and cook, stirring occasionally, until the spinach wilts, about 2-3 minutes.
Stir in 1/4 cup of grated Parmesan cheese until melted and well combined. Serve immediately.
