Hearty Catalan Farmer's Stew with Botifarra Sausage
Warm up with a traditional Catalan farmer's stew, Escudella de Pagès. This comforting one-pot meal combines tender vegetables, pasta, and savory botifarra sausage for a truly satisfying dinner.

Heat 2 tablespoons of olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add the sliced botifarra sausage and cook for 5-7 minutes, turning occasionally, until browned on all sides. Remove the sausage with a slotted spoon and set aside, leaving the rendered fat in the pot.
Add the chopped onion, diced carrots, and diced celery to the pot. Sauté for 8-10 minutes over medium heat, stirring occasionally, until the vegetables soften.
Stir in the minced garlic, smoked paprika, and crumbled saffron threads. Cook for 1 minute more, until fragrant.
Pour in the crushed tomatoes and chicken broth. Bring the mixture to a simmer, then reduce the heat to low, cover, and let it cook for 30 minutes to allow the flavors to meld.
Return the cooked botifarra sausage to the pot. Add the small pasta and continue to simmer, uncovered, for 10-12 minutes, or until the pasta is al dente.
Season the stew with salt and black pepper to taste. Ladle the Escudella de Pagès into bowls and garnish generously with fresh chopped parsley before serving.
