Traditional Bulgarian Kyufte with Lutenitsa and Fresh Parsley

In a large bowl, combine the ground beef, grated onion, ground cumin, black pepper, salt, and 2 tablespoons of chopped fresh parsley. Mix thoroughly with your hands until all ingredients are well incorporated.
Form the mixture into 12-16 small, flattened oval-shaped meatballs (kyufte), about 1/2 inch thick.
Heat the vegetable oil in a large skillet over medium-high heat. Once hot, carefully place the kyufte in the skillet, ensuring not to overcrowd the pan. You may need to cook them in batches.
Cook the kyufte for 4-6 minutes per side, or until they are nicely browned and cooked through. The internal temperature should reach 160°F (71°C). Remove from the skillet and set aside.
Warm the lutenitsa gently in the same skillet for 2-3 minutes over low heat, stirring occasionally, or serve it at room temperature.
Arrange the cooked kyufte on a serving platter. Spoon the lutenitsa alongside or over the meatballs. Garnish generously with additional fresh chopped parsley before serving.
