Brazilian Cassava and Cheese Fritters

These savory Brazilian cassava and cheese fritters, known as Bolinhos de Mandioca com Queijo, are a delightful breakfast or snack. Crispy on the outside and soft and cheesy within, they offer a taste of Brazilian comfort food.

✎
HOW TO MAKE IT

Let's cook.

01

Boil the cassava in a pot of salted water until very tender, about 15-20 minutes. Drain well and mash thoroughly with a fork or potato masher until smooth. Remove any fibrous strands.

02

In a large bowl, combine the mashed cassava, salt, milk, shredded mozzarella cheese, grated Parmesan cheese, and beaten egg. Mix until well combined and a soft dough forms.

03

Heat the vegetable oil in a deep skillet or pot over medium-high heat until it reaches 350°F/175°C. If you don't have a thermometer, a small piece of dough should sizzle immediately when dropped in.

04

Form the cassava mixture into small, oval-shaped fritters, about 1.5 inches long. You should get about 12-15 fritters.

05

Carefully place 3-4 fritters into the hot oil, ensuring not to overcrowd the pan. Fry for 3-4 minutes, turning occasionally, until golden brown and crispy on all sides.

06

Remove the fried fritters with a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Repeat with the remaining fritters.

07

Serve the Brazilian Cassava and Cheese Fritters warm.

Chef's Tips

For extra flavor, you can add a pinch of black pepper or a finely minced garlic clove to the cassava mixture. Ensure the oil is at the correct temperature for frying; if it's too cool, the fritters will absorb too much oil and become greasy, and if too hot, they will burn on the outside before cooking through.

Easy Substitutions

You can substitute mozzarella with other good melting cheeses like provolone or a mild cheddar. For a dairy-free version, use plant-based milk and vegan cheese alternatives. If fresh cassava is unavailable, frozen pre-cooked cassava can be used, just ensure it's thawed and mashed well.

Storage & Reheating

Store leftover fritters in an airtight container in the refrigerator for up to 2 days. Reheat them in a toaster oven or air fryer at 350°F/175°C for 5-7 minutes until crispy again.
