Heat 1 tablespoon of olive oil in a 10-inch non-stick skillet over medium heat.
Add the sliced sucuk sausage to the skillet and cook for 3-4 minutes, flipping occasionally, until lightly browned and some fat has rendered. Remove the sucuk from the skillet and set aside, leaving the rendered fat in the pan.
Add the chopped onion and diced green bell pepper to the skillet. Sauté for 5-7 minutes over medium heat, until the vegetables are softened.
Stir in the paprika and red pepper flakes (if using) and cook for 1 minute more, until fragrant.
Return the cooked sucuk to the skillet, distributing it evenly among the vegetables.
Crack the 4 large eggs directly into the skillet, spacing them out. Season the eggs with 1/4 teaspoon of salt and 1/8 teaspoon of black pepper.
Cover the skillet and cook for 4-6 minutes, or until the egg whites are set and the yolks are cooked to your desired consistency (runny, jammy, or firm).
Garnish with 2 tablespoons of fresh chopped parsley and serve immediately, directly from the skillet.
