Place a large cast-iron skillet over medium-high heat and add 2 tablespoons of butter.
Add the potato pieces to the skillet in a single layer and cook for 8-10 minutes, stirring occasionally until they begin to brown.
Push the potatoes to one side of the skillet and add the chicken pieces to the empty side.
Season the chicken and potatoes with Italian seasoning and smoked paprika.
Cook for another 8-10 minutes, stirring occasionally, until the chicken is cooked through and potatoes are fork-tender.
Reduce heat to low, add the remaining 2 tablespoons of butter and minced garlic to the center of the pan, stirring to coat everything evenly for 1-2 minutes.
Garnish with fresh parsley and serve immediately directly from the skillet.
