Sudanese Apricot Drink with Toasted Nuts
Experience the vibrant flavors of Sudan with this refreshing Gamar Eldin, a delightful apricot drink. Enhanced with a sprinkle of toasted nuts, it offers a wonderful balance of sweet, tangy, and nutty notes, ideal for a light meal or a revitalizing pick-me-up.

Place the chopped dried apricot sheets in a heatproof bowl and pour the hot water over them. Let them soak for at least 15 minutes, or until softened.
Transfer the softened apricots and soaking water to a blender. Add the granulated sugar and blend until completely smooth. If the mixture is too thick, add a splash more water until desired consistency is reached.
Stir in the orange blossom water. Taste and adjust sweetness if necessary.
Pour the apricot drink into a pitcher and chill in the refrigerator for at least 1 hour, or until thoroughly cold.
While the drink chills, toast the almonds and pistachios. Heat a small dry skillet over medium heat. Add the almonds and toast for 3-5 minutes, stirring frequently, until lightly golden and fragrant. Remove from skillet.
Add the pistachios to the same skillet and toast for 2-3 minutes, stirring frequently, until lightly golden and fragrant. Remove from skillet.
To serve, pour the chilled Gamar Eldin into individual glasses and sprinkle generously with the toasted almonds and pistachios.
