Isso Wade: Spicy Sri Lankan Lentil and Prawn Fritters
Experience the vibrant flavors of Sri Lankan street food with these irresistible Isso Wade. These savory lentil fritters are studded with succulent prawns and infused with a delightful chili kick, making them an ideal choice for a flavorful lunch or an exciting appetizer.
Let's cook.
Drain the soaked red lentils thoroughly. In a food processor, pulse the lentils until coarsely ground, retaining some texture. Do not make a smooth paste.
Transfer the ground lentils to a large bowl. Add the chopped red onion, green chilies, ginger-garlic paste, turmeric powder, fennel seeds, chopped curry leaves, and salt. Mix well to combine all ingredients.
Take a small portion of the lentil mixture, about 2 tablespoons, and flatten it into a disc shape, approximately 1/2 inch thick. Press one prawn onto the center of each disc, ensuring the tail is visible.
Heat the vegetable oil in a deep pan or wok over medium-high heat until it reaches 350°F (175°C).
Carefully slide the Isso Wade into the hot oil, frying in batches to avoid overcrowding the pan. Fry for 3-4 minutes per side, or until golden brown and crispy.
Remove the Isso Wade from the oil with a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil. Serve hot.
