Serbian Salčići (Pork Crackling Cookies) with Jam Filling
These traditional Serbian Salčići are unique, flaky cookies made with rendered pork cracklings, offering a savory-sweet experience. Filled with your favorite jam, they are a delightful treat for any occasion.

In a large bowl, combine the finely ground pork cracklings, flour, granulated sugar, baking powder, and salt. Mix well until the cracklings are evenly distributed.
Add the cold water and egg yolk to the dry ingredients. Mix with your hands until a shaggy dough forms, then turn it out onto a lightly floured surface and knead for 5 minutes until smooth.
Roll the dough into a rectangle approximately 1/4 inch thick. Fold the dough into thirds, like a letter, then turn it 90 degrees. Repeat the rolling and folding process two more times. This creates the flaky layers.
Wrap the dough in plastic wrap and refrigerate for 30 minutes to allow it to rest and firm up.
On a lightly floured surface, roll the chilled dough into a rectangle about 1/8 inch thick. Cut the dough into 2-inch squares.
Place 1/2 teaspoon of your chosen jam in the center of each dough square. Fold two opposite corners of the square over the jam, pressing firmly to seal, creating a triangular or rectangular shape.
Arrange the cookies on a baking sheet lined with parchment paper. Bake in an oven preheated to 375°F/190°C for 18-20 minutes, or until golden brown and puffed.
Remove the cookies from the oven and let them cool slightly on the baking sheet before transferring them to a wire rack to cool completely.
Once cooled, dust the Salčići generously with powdered sugar before serving.
