Panamanian Cocadas with Guava Glaze

In a large bowl, combine the shredded sweetened coconut, sweetened condensed milk, vanilla extract, and salt. Mix well until thoroughly combined.
In a separate clean bowl, beat the egg whites with an electric mixer until stiff peaks form.
Gently fold the beaten egg whites into the coconut mixture until just combined. Be careful not to deflate the egg whites.
Drop rounded tablespoons of the mixture onto a baking sheet lined with parchment paper, spacing them about 1 inch apart.
Bake the cocadas in an oven preheated to 325°F (160°C) for 18-20 minutes, or until the edges are golden brown and the centers are set.
While the cocadas are baking, prepare the guava glaze. In a small saucepan, combine the diced guava paste and water. Heat over medium-low heat, stirring frequently, until the guava paste melts and forms a smooth, pourable glaze.
Remove the cocadas from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Once cooled, drizzle the warm guava glaze generously over each cocada. Allow the glaze to set slightly before serving.
