Kurdish Qayghan: Herb and Egg Frittata with Flatbread

In a large bowl, whisk the eggs until well combined. Stir in the chopped parsley, dill, mint, scallions, salt, and black pepper.
Heat 2 tablespoons of olive oil in a 10-inch oven-safe non-stick skillet over medium heat. Pour the egg mixture into the hot skillet, spreading the herbs evenly.
Cook on the stovetop for 5-7 minutes, or until the edges are set and the bottom is golden brown. Do not stir the mixture.
Transfer the skillet to a preheated oven and bake at 350°F (175°C) for 10-12 minutes, or until the frittata is fully set and lightly golden on top.
