HOW TO MAKE IT

Let's cook.

01

Rinse the Basmati rice and masoor dal separately until the water runs clear. Soak them together in fresh water for 15 minutes, then drain.

02

Hard boil the 4 large eggs. Once cooked, peel them and make small slits on the surface of each egg. In a medium pot, heat 1 tablespoon of vegetable oil over medium heat. Fry the eggs for 2-3 minutes until lightly golden, then set aside.

03

In the same pot, add the remaining 2 tablespoons of vegetable oil over medium heat. Add the chopped onion and cook for 5-7 minutes until softened and translucent. Stir in the ginger-garlic paste and cook for 1 minute until fragrant.

04

Add the turmeric powder, cumin powder, and red chili powder to the pot. Cook for 30 seconds, stirring constantly, to toast the spices. Add the drained rice and dal, stirring gently for 2 minutes to coat them with the spices.

05

Pour in 2.5 cups of water and 1 teaspoon of salt. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 15 minutes until the water is absorbed and the rice and dal are cooked.

06

While the khichuri simmers, prepare the egg curry. In a separate small pan, heat 1 tablespoon of vegetable oil over medium heat. Add 1/2 of the remaining chopped onion and cook for 3-4 minutes until softened. Stir in 1/2 teaspoon of turmeric powder, 1/2 teaspoon of cumin powder, and 1/4 teaspoon of red chili powder. Cook for 30 seconds.

07

Add 1/2 cup of water to the egg curry pan, bring to a simmer, then add the fried eggs. Cook for 5 minutes over low heat, allowing the flavors to meld. Stir in 1/4 teaspoon of garam masala.

08

Once the khichuri is cooked, gently fluff it with a fork. Stir in 1/4 teaspoon of garam masala into the khichuri. Serve the Bhuna Khichuri hot with the prepared Egg Curry on the side.

Chef's Tips

For extra flavor in the khichuri, you can add a bay leaf and a few green cardamom pods when sautéing the onions. Adjust the amount of red chili powder in both the khichuri and egg curry to suit your spice preference. A drizzle of ghee over the khichuri before serving enhances its richness.

Easy Substitutions

You can use brown lentils (masoor dal) if red lentils are unavailable, though cooking time may vary slightly. For a vegetarian option, omit the eggs and serve the khichuri with roasted vegetables or paneer curry. Any neutral cooking oil can be used in place of vegetable oil.
▱

Storage & Reheating

Store leftover Bhuna Khichuri and Egg Curry separately in airtight containers in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of water if needed to prevent drying out.

Serving Suggestions

Serve with a side of fresh cucumber and tomato salad, a dollop of plain yogurt or raita, a squeeze of fresh lime juice, or a sprinkle of fresh cilantro for garnish.

Common Mistakes

Overcooking the rice and dal can lead to a mushy khichuri; ensure you follow the cooking times and liquid ratios. Not toasting the spices enough will result in a less flavorful dish. Adding too much water can make the khichuri soupy instead of bhuna-style. Not making slits in the eggs for the curry can prevent them from absorbing the rich flavors.

Frequently Asked Questions

Can I make this recipe vegan?

Yes, you can omit the eggs and serve the khichuri with a vegetable curry or roasted vegetables for a delicious vegan meal.

What is the difference between Bhuna Khichuri and regular Khichuri?

Bhuna Khichuri is typically drier and more aromatic, with the rice and lentils sautéed ("bhuna") with spices before cooking. Regular khichuri can be more soupy or porridge-like.

Can I use other types of lentils?

While masoor dal (red lentils) are traditional, you can experiment with other quick-cooking lentils like split moong dal, adjusting cooking times as needed.
MORE TO KNOW
Bhuna Khichuri is a dry, flavorful khichuri where the rice and lentils are sautéed with spices before cooking, resulting in a distinct aroma and texture compared to a more soupy khichuri. The key to a good bhuna khichuri is toasting the spices and grains well. For the egg curry, making small slits in the boiled eggs helps them absorb the curry flavors better. Don't overcrowd the pot when frying the eggs to ensure even browning.
