Arrange the 8 large lettuce leaves on a clean surface.
Divide the cooked chicken evenly among the lettuce leaves.
Top the chicken with 1 cup of shredded carrots and 1/2 cup of chopped red bell pepper.
Drizzle each wrap generously with the prepared peanut sauce.
Carefully fold or roll the lettuce leaves to create wraps. Serve immediately.
