HOW TO MAKE IT

In a large bowl, combine the semolina, all-purpose flour, granulated sugar, and ground mahlab. Pour in the melted butter and mix with your fingertips until the mixture resembles coarse crumbs.

Gradually add the warm water, mixing until a soft, pliable dough forms. Cover the bowl with plastic wrap and let it rest at room temperature for 30 minutes.

While the dough rests, prepare the date filling. In a small bowl, combine the finely chopped dates and ground cinnamon. Mash with a fork until a thick paste forms. If too stiff, add a teaspoon of warm water.

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Take a small piece of dough (about 1 tablespoon) and flatten it into a disc in your palm. Place about 1 teaspoon of date filling in the center.

Carefully bring the edges of the dough together to enclose the filling, forming a ball. Gently flatten the ball slightly or press it into a ma'amoul mold if you have one, then place it on the prepared baking sheet.

Bake for 12-15 minutes, or until the cookies are lightly golden on the bottom and edges. They should not brown significantly on top.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Once cooled, dust generously with powdered sugar before serving.
