Wash the pears thoroughly. Carefully cut each pear in half lengthwise and use a spoon or melon baller to scoop out the core, creating a small cavity.
In a small bowl, combine the finely chopped dates, chopped walnuts, ground cinnamon, and ground ginger. Mix well until evenly distributed.
Spoon the date and walnut mixture into the cavities of each pear half, mounding it slightly.
Arrange the stuffed pear halves in the prepared baking dish. Pour the 1/4 cup of water into the bottom of the dish.
Drizzle 1/2 tablespoon of honey over the filling of each pear half.
Bake for 25-35 minutes, or until the pears are tender when pierced with a fork and the filling is slightly caramelized. Cooking time may vary based on pear ripeness.
Carefully remove from the oven and let cool for 5-10 minutes before serving. Serve warm.
